We met in college. Steve noticed me in a 300+ student anthropology class we were both taking. At the time I was working in the food court in his dorm. He noticed me there during a lunch shift and came up to me to ask me how I liked the class. I was flattered that he had noticed me in a lecture hall full of students and knew immediately that he was interested.
How long have you two been vegan:
I have been vegan for 1 year, vegetarian for 4 years prior to that. Steve has been vegetarian for 10 years.
Was the proposal a complete surprise:
I had a feeling it was coming soon!
What was the best part of the proposal:
We were visiting Tennessee for Thanksgiving, where Steve met many of my family members for the first time. It was a very special weekend. We were enjoying a hike alone in Great Smoky Mountains National Park the day after Thanksgiving when he asked me to be his bride. It was perfect! One of my favorite parts was being able to share the news with family when we met up at Dollywood afterward (Dolly Parton’s theme park). We had fun taking silly pictures at all of the photo op spots around the park. We used the photo of us with the baby owls as the engagement announcement.

Yes, we are planning an October 8, 2011 destination wedding in Las Vegas!

Is your family supportive of your vegan nuptials:
Yes! They are still unsure about the meal, but I am working very hard to make sure it is amazing, and something that will be talked about for years to come.
Is there one vegan item that’s been particularly challenging to find:
The food. Vegas has so much to offer for wedding packages, but most places don’t have very impressive vegan options (if at all). Thankfully we found a wonderful vegan caterer and she recommended a venue that will work with her. I am also still looking for a vegan-friendly makeup artist.
